Not trying to start a recipe theme going on here, but I've been trying to find a recipe for wholesome muffins and yours sounds nutritious, Huntng4Os. If it's no problem, I'd sure like to get that from you.
It's true - breakfast is a problem. I'm in no mood to start the day off cooking for myself. I keep resorting to cereal. At least I'm getting good amounts of fiber in my diet by choosing the nutritious stuff versus the sugary stuff. |

I do like oatmeal. I'll have to look for some casserole recipes. I love yogurt too but it's got so much sugar in it and I don't like artificial sweetners. I've thought about getting plain yogurt and adding a little fruit juice and some fruit to it. Has anyone tried that? Does it taste good?

I was thinking last night of starting a new thread titled Recipes because I too am sick of just eggs for brekkie. And if we can help each other, why not? Here is the recipe for the muffins. Let me know if you make them and what changes you do to it, okay? 1 egg 3/4 C. fat free half & half 3 Tbs canola or olive oil 1/3 C. sugar (I used the white, but I think dark brown will taste better) 1 Med. firm apple, diced smallish 3/4 C. craisins (Or raisins. Or cherries. You get the idea) 1/2 C. walnuts, chopped 1 C. whole-wheat flour 1 C. quick cooking oats (NOT instant) 1/4 tsp. salt 1 Tbs. baking powder 1/2 tsp. nutmeg 2 tsp. cinnamon (I also added some ginger and cardamom. My suggestion is one of them, not both!) Heat oven to 450deg. Beat together egg, half & half, oil & sugar. In a seperate bowl combine rest of ingredients, tossing well to coat the fruit. Fold egg mixture into dry, just until moistened. Fill non-stick tins 3/4 full. Bake 15-20 minutes. I found 15 minutes to be long enough; if you prefer not using sugar the recipe calls for splenda. Personally I don't like artificial stuff in my food, so will stick with the sugar. Next time I make it I will try using pears instead of apples, and adding dates as the dried fruit. You can pretty much mix it up anyway you like and it's all complex carbs (except the fruit), antioxidants, and fiber so it's very healthy, and simple to make. Huntng4Os |

Michele- Yes, yogurt with fruit is delicious and even better with granola mixed into it! I just tried Activa and found it to be quite tasty- a bit tart, and not too thick. I like it because the ingredients are reduced fat milk and corn starch. Nothing else.
Friendship brand yogurt is good, too, though my grocery store stopped carrying it. I generally add canned fruit packed in a 'lite' syrup, or blueberries by a brand called Oregon Fruit Products. They have fruit, water, and sugar as the ingred. which I like. My store keeps it in with the pie filling section, maybe that will help you find it at your store. Yogurt makes a pretty decent shake if you can find a good thick one- add frozen fruit, honey, some whey protein if you like, a few spices, blend for a moment and voila! Brekkie to go! Huntng4Os |

I like organic yogurt, which I very recently started getting. It's a little more expensive, but I know it's so much more healthy for me than all the refined crap and high fructose corn syrup in all the other brands. I get vanilla or plain and add in (thawed) frozen blueberries or strawberries mashed up. That way I'm getting real fruit without the worry of having to use it up quickly before it goes bad. And the frozen fruit is also really great in shakes, too, instead of canned fruit.

They were pretty tasty. I think I need to replace my baking powder as they were a bit on the flat side.
I didn't have quick cooking oats so used the long time stuff and I wonder if that had something to do with it, too. Enjoy your vacation! Huntng4Os |

Thanks for the answers about yogurt. I went ahead and bought some plain organic yogurt over the weekend and mixed granola into it this morning. It was a little tart, but good. I think I'll try adding a little table sugar to it next time. That way I get some sweetness but not the huge amount of sugar that's in the flavored varieties. Um. I really hope I didn't offend anyone when I said I called my girlfriends a bunch of pussies for not swallowing. I said that to them because they're my girlfriends and we tease each other frequently. I do not actually think women who prefer not to engage in that activity are wimpy. I forgot for a moment that I'm on a message board with a bunch of people who don't know me. I'm really very much a live and let live kind of gal!

Try Stonyfield Farm organic french vanilla yogurt. It's fat free and still sweet enough to not require the addition of sugar, whereas I have found other yogurts needing this extra sweetness. Personally, I love the stuff. |
