You suggest proportioning meals to meet the 40-30-30. Does it have to be that way at every meal or is it okay as long as that's where you are at the end of the day? Sometimes I eat and feel full so I have to eat the rest of the veggies or fruit later, especially after breakfast.
Balancing at every meal helps keep the serotonin/dopamine balance. Eating a later meal of only carbs will cause serotonin to jump. Although if it's only fruits and vegetables that probably won't happen because of the fiber slowing digestion. But don't bother trying to get the balance over the day for neurotransmitters, just at a particular meal.
As for SHBG, eating lots of sugary or starchy carbs over time will cause SHBG to go up over time. Fruits and vegetables should have no impact on that.
